This recipe works best in a big black roaster like this one:
It might sound silly, but if you use a regular tin or any other type of pan, it just won’t be the same.
Roast Chicken
I often prepare everything in the roaster the night before and cook it fresh.
Materials
- Chicken on the bone
- Red potatoes
- Sweet potatoes
- String beans
- Paprika
- Garlic powder
Instructions
- Peel potatoes and cut into big pieces, place in cold/warm water until step 3.
- Wash string beans very well and cut off ends.
- Line the potatoes on the bottom of the roaster and generously sprinkle with garlic powder and paprika. To get a nice color wet hands and rub potatoes until paprika and garlic powder are all over the potatoes.
- Place string beans on top of potatoes and sprinkle with garlic powder and paprika.
- Clean chicken (I remove the skin) and place on top of string beans. Generously sprinkle with garlic powder and paprika and rub all over chicken like in step 3.
- Put some water in the bottom of the roaster to just cover the bottom, so potatoes don't burn.
- Cover and cook in oven a 375° for 2 hours (the longer you cook it the softer everything will get!)
- Check half-way through to make sure potatoes aren't burning. If needed add more water.
