When I first started using Facebook, all I did was follow my friends. I was so surprised when I saw a group dedicated to Kosher recipes. It was just about the time I got married, so I checked it out.
Most of the recipes that were posted were way more complicated (read: included sauteing vegetables) than I thought I was capable of. When I finally found this recipe for zucchini kugel, I was so excited! I could totally make this.
I finally made it and was glad I did. DH loved it and going forward, zucchini kugel became a staple on our Shabbos table. In fact, we talked about this kugel so much (and how good it was) that my sister had to make it and it’s now a staple on her Shabbos table as well.
All in all, this was a great Facebook find!
Zucchini Kugel (2 steps)
Materials
- 6 zucchini
- 1 small onion
- 6 tbsp oil
- 6 tbsp flour
- 3 tbsp sugar
- 1 tbsp onion mix
- 1 tsp salt
- 3 eggs
Instructions
- Boil zucchinis until soft
- Let the zucchinis cool and then mash them (drain access water)
- Chop onion into tiny pieces
- Add the remainder of ingredients to a bowl and mix
- Cook in a 9x13 pan for one hour on 350°
