This butternut squash kugel is so easy to make, you’ll never make it any other way! It is the perfect dish to bring to a pot-luck Shabbos meal and it tastes great with almost any entree.
Most kugel recipes I come across are so unhealthy that they should be served as dessert. This recipe is different. It uses natural applesauce- so there’s no margarine or oil in it at all!
With limited cooking time, I love recipes that use frozen veggies. That means I can stock up on the main ingredients (and take advantage of sale prices!) and then cook when I have more time available.
Butternut Squash Kugel
Materials
- 4 boxes frozen winter squash (10 oz ea.)
- 2 cup flour
- 1 cup sugar
- 1/2 cup applesauce
- 4 large eggs
- cinnamon
Instructions
- Mix all ingredients
- Grease 2 8×8 pans and pour ingredients into prepared pans
- Sprinkle cinnamon on top
- Bake on 350° for 45 minutes
