This isn’t even a recipe, but I’m posting it anyway. This way of cooking has changed my life and makes me actually feel good about the dinners I’m preparing my my children.
So what is it? BBQ Shredded Chicken. It’s exactly what it sounds like. I make this whenever I see chicken cutlets on sale. I buy a family pack, put it in the crock pot. Then I pour BBQ sauce on it and let it all cook for 4-5 hours until the chicken is cooked through. Then I shred the chicken and put it back in the sauce. I give it a mix and serve it with veggies and rice.
There is no science to this. It’s really as easy as it sounds, but the reason I’m posting it is because a lot of my friends haven’t tried this yet! They didn’t know how easy it could be to make a dinner their kids would enjoy.
So, now that you know how easy this is to make, I have to tell you the best part – this chicken freezes so well!
Since my kids are small I can get 3 meals out of this. I also cook rice to go along with it and freeze that in 3 bags as well. After it’s all put away I have 3-4 complete meals in the freezer ready to go.
My kids love it and honestly I’d rather make this than store-bought chicken nuggets. I know this is 100% real chicken and I know that they will eat it.
Oh, and don’t forget to use the slow-cooker cooking bags- makes clean up a dream.
