Lentil Tomato Soup
Materials

medium celery stalk
small dice

medium carrot
peeled and small dice

medium yellow onion

medium garlic
minced (I just used a few shakes of garlic powder)

vegetable soup mix

can diced tomatoes with juices

bag lentils
rinsed, any color except red

italian seasoning
Salt and pepper to taste
Instructions
Add all ingredients to a large pot, cover and bring to boil
Once boiling, reduce flame and let simmer for one hour or until lentils and carrots are soft
For thicker texture, use immersion blender to blend some of the soup
